[OSEN = Yoo Soo-yeon] Chef Ahn Sung-jae shared his views on restaurant management.
On the 5th, a video titled “Napoli Mafia’s Favorite Spanish Dining Spot” was uploaded on the YouTube channel ‘Chef Ahn Sung-jae’.
In the video, Ahn Sung-jae met with Napoli Mafia (Chef Kwon Seong-jae), the winner of Netflix’s ‘Black and White Chef’ Season 1.
During their meal, Chef Kwon asked, “I heard rumors that Chef Ahn Sung-jae scolds his staff whenever he goes to ‘Mosu’.” Chef Ahn admitted, “That’s not a false rumor. It’s fortunate if the customers didn’t hear any swearing.”
Chef Ahn explained, “But there’s something I make clear to my staff: it’s better for them to be scolded by me.” He confidently stated, “I have never personally attacked or insulted my staff; it’s always about the situation. Although it can be unpleasant to hear and some might insist ‘you shouldn’t swear,’ I never do it to upset anyone.”
He continued, “It’s better for witnesses to see me reprimanding staff than for customers to be served a poorly made dish. So, I apologize to the customers, and even though I consider lowering my voice, those around me came to learn from me. My best way to help them is to share my knowledge and make decisions and explain them.”
He further elaborated, “Sometimes we stop everything and I’ll instruct ‘do it like this.’ Even if someone says ‘customers are waiting,’ I’ll respond with ‘please ask them to wait for a moment.’ We need order to serve better food. It’s always a juggler’s act between ingredient quality and time. I try my best in my role, keeping all these factors in mind.”
